HELLO EVERYONE!! I have decided to create this page to share little by little my delicious French Recipes with you all.
I love cooking and I love French Food!! But since I've been VEGETARIAN my whole life, let's say... over 40 years 😂
I try to create whenever possible, a Vegetarian version of my favorite recipes and I will tell you how to make the Veggie Version as well.

January 4th - NATIONAL SPAGHETTI DAY!
FRENCH SPAGHETTI RECIPE:
Popular history says that Spaghetti was invented in China, and that Marco Polo brought the knowledge of this food to Venice. Spaghetti is a very popular dish in Italy and France.
It is great paired with a good red wine! 🍷 BON APPETIT! 🍽
French Spaghetti Recipe (Including my Vegetarian Version - not so French 😂)
Serves about: 4-6 persons
Preparation Time: About 45 min
Ingredients
Directions:
1-While your spaghetti is cooking, heat the oil and butter in a large sauce pan over medium heat and add the diced onion, cooking until it is light gold color.
2-Add the garlic and cook for about 30 seconds being careful not to burn it.
3-Add the diced red pepper, keep stirring and cook another 2 minutes.
3-Always Stirring in low heat, add the tomato sauce, the ground beef, the wine and then the herbs. Add salt and pepper to your taste. Bring to a simmer and let it cook for 20 minutes stirring often.
4-Serve over pasta or mix with it to combine. Top with lots of fresh Parmesan Cheese (or Dairy Free Grated Cheese), chopped basil or parsley.

Ingredients
- 1lb Spaghetti cooked per package instructions (To make a “Gluten Free” dish, I used Organic Gluten Free Spaghetti)
- ½ lb Ground Beef (To make a “Vegetarian” dish, I used 1 pack 12oz of Vegetarian Meatless Ground Beef)
- 1 large onion diced
- 4 cloves garlic minced
- 1 red pepper diced
- 6 tbsp extra virgin olive oil
- 1/4 cup butter (I always use Organic Grass Fed Butter, if you want to make it “Dairy Free”, just use Olive Oil)
- 1 29 oz can of tomato sauce (I used 1 can 14.5oz of Organic Diced Tomato and 1 can 14.5oz of Organic Tomato Sauce)
- 1 tbsp of our Authentic and Natural “Herbes de Provence Mix” – recommended by French Chefs for a great dish.

- 1/2 cup red wine
- Fresh Parmesan Cheese (Dairy Free Grated Cheese for dairy free dish) for topping.
- Fresh basil or parsley for topping.

January 10th - BITTERSWEET CHOCOLATE DAY!
MOUSSE AU CHOCOLAT RECIPE:
The origins of Chocolate Mousse are relatively unknown. After being introduced to chocolate by the Spanish, French chefs have been cooking with chocolate since the early 17th century. Mousse, which means “foam,” originated in France in the 18th century.

Mousse au Chocolat - Chocolate Mousse (This dessert is vegetarian but not vegan since we use dairy)
Serves about: 4-6 persons
Preparation Time: About 1hr 20 min
Ingredients:
Directions:
1-Place chocolate in a large bowl set over a "bain marie" or in a double boiler at a low simmer. Stir chocolate until melted.
Turn off the heat and let stand.
2-Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks.
Gradually add the sugar and continue whipping until firm.
3-Remove the chocolate from the “bain marie” and using a whisk, fold in the egg whites all at once.
When the whites are almost completely incorporated, fold in the whipped cream.
Cover the mousse and refrigerate for approximately 1 hour or until set.
Serve in goblets topped with more whipped cream and shaved chocolate, if desired.

- 14 oz cold heavy cream
- 3 large egg whites
- 1 oz sugar
- Whipped Cream for garnish (optional)
- Shaved bittersweet chocolate for garnish (optional)

1-Place chocolate in a large bowl set over a "bain marie" or in a double boiler at a low simmer. Stir chocolate until melted.
Turn off the heat and let stand.
